Toast: the brewery that turns bread into beer

Toast might be the most purposeful brewery in the directory. Founded by food-waste campaigner Tristram Stuart (with co-founder Louisa Ziane) after he saw skip-loads of fresh crusts binned daily by sandwich factories, Toast brews by replacing a share of malted barley with surplus fresh bread — reviving a technique as old as beer itself, inspired by the Brussels Beer Project’s bread beer.

The structure is as radical as the recipe: Toast gives all its distributable profits to charities fixing the food system (including Feedback, which Stuart founded), was the first UK brewery certified as a B Corp, has open-sourced its bread-beer recipe, and holds a Queen’s Award for Enterprise in Sustainable Development. Buying its beer is arguably the most productive thing a pint can do.

The numbers behind the whimsy are serious: millions of slices of surplus bread diverted from waste, tens of thousands of pounds to food-system charities, and an ‘Equity for Good’ investment model — backed by names including the National Geographic Society — that requires shareholders to reinvest gains in social-impact businesses. Few beers let you drink your values quite so literally.
