Beak Brewery: Lewes's modern craft success
Beak Brewery was founded in 2020 in Lewes, East Sussex, by Daniel Tapper — formerly a food and drink writer for publications including The Guardian, Channel Four, and Waitrose Food Monthly. The brewery began as a 'nomadic' project: rather than building a brewery from scratch, Tapper spent several years travelling the UK collaborating with established breweries like North Brew Co, Partizan, Beavertown, Burning Sky, and Northern Monk to test recipes and develop the Beak philosophy. In 2020, the project found its permanent home in Lewes — a town with proper brewing heritage thanks to Harvey's, plus a growing modern craft scene.
What Beak is known for
Beak's reputation is built on hazy, hop-forward IPAs and pale ales — the modern UK craft style executed with particular care. Their range includes saturated NEIPAs, softer table-format pales, and increasingly ambitious mixed-fermentation projects through their on-site fermentation programme.
