Omnipollo is one of the most creative breweries on earth — a Swedish brewer-and-artist partnership that helped invent the pastry stout and now brings the same fearless imagination to alcohol-free beer.

Who are Omnipollo?

Omnipollo was founded in Stockholm by brewer Henok Fentie and artist Karl Grandin, who released their first beer in 2010 and formally founded the brewery in 2011. Introduced by a mutual friend, the two initially bonded over art as much as beer — and that fusion of brewing and design has defined Omnipollo ever since. The name is a portmanteau of ‘omnipotent’ and ‘pollo’, the Spanish word for chicken.

For years Omnipollo was a ‘gypsy’ brewer, developing recipes in Stockholm and brewing them at other breweries around the world — including Buxton Brewery in England. Around 2020 it opened its own brewery inside a 100-year-old converted church in Stockholm, and it now runs bars in Stockholm, Hamburg and Tokyo.

What makes Omnipollo different?

The pastry stout pioneers

Omnipollo helped define the modern dessert-beer movement — decadent, heavily adjuncted stouts loaded with marshmallow, vanilla, pecan and chocolate. That same imagination runs through its alcohol-free range, which refuses to play it safe.

Beer as art

Co-founder Karl Grandin designs every label, and Omnipollo's cans are genuinely collectible — the smiley-face roundel is iconic in craft beer. The brewery treats each release as a combined work of flavour and design.

Fearless experimentation

Smoothie IPAs, protein IPAs, pastry stouts, fruited sours — Omnipollo brews styles most breweries wouldn't attempt. Its alcohol-free beers carry that DNA, which is why they're some of the more interesting AF options coming out of Europe.
